Last Halloween, we were oh-so-proud of our carved pumpkins that we couldn't bear throw them away, so we lined them up in the backyard where they were enjoyed until the very end.

Nature took it's course & without any help or human effort, vines started to appear & the backyard pumpkin patch was born!

It amused the whole family so much that every morning, we would check on the progress of our patch. One month later, the pumpkins were ready to be plucked.

What to do… what to do?… It was decided that when life hands you pumpkins, you make pumpkin pie!

 Recipe: When Life Hands You Pumpkins, You Make Pumpkin Pie

Preparation Time: 10 min.
Cooking Time: 50 min.

Ingredients:

  

  • 1 cup mashed pumpkin
  • 3/4 cup fat free milk
  • 2 tsp pumpkin pie spice
  • 1/2 cup brown sugar
  • 1/8 tsp salt
  • 1 store-bought graham cracker crust


Method:

Preheat oven 350 degrees.

  • Cut pumpkin into 4 pieces & microwave for 10 min. to soften. Scrape insides.
  • In blender, puree insides of the pumpkin with milk, eggs, brown sugar, pumpkin pie spice and salt until completely mixed.
  • Pour into graham cracker crust and bake for 45 to 55 minutes or until pie is set in the center.

  • Yum. Here’s a great recipe for pumpkin soup:
    Take half a medium-sized pot of fresh pumpkin (or roasted) +2 potatoes, 1/2 onion, ginger to taste, a small apple, salt, pepper, water.
    Cook everything, blend, add lots of creme fraiche.

    The only thing better than eating or drinking leftover pumpkin is slathering them all over your body. All you need for this DIY project is pumpkin puree, coconut milk solids, and ground cinnamon. Mix it all together and voila, ready for moisturizing duty.
