Pomegranate Sauce

This sauce absolutely brings to life a nice cut of chicken or beef.  The sweetness of the sauce almost puts it into a bbq category (great for summer entertaining), but much more sophisticated!  Enjoy over roasted vegetables or tofu as well. 

serves 8


  • 8 oz. POM
  • ¼ cup chicken stock
  • 4 springs thyme
  • 1 ½ tablespoons sugar
  • salt and pepper, to taste


In a small saucepan reduce POM juice by half.  Add chicken stock, thyme, and sugar.  Reduce to sauce consistency.  Strain and season with salt and pepper to taste.
