Pomegranate Braised Tofu




Ingredients:

- 1 lb. Firm Tofu (organic and non-GMO if possible)
- 1 cup pomegranate juice
- ¼ cup soy sauce
- 1 clove garlic, crushed
- Neutral vegetable oil for pan searing 

Instructions:

- In a casserole dish combine pomegranate juice, soy sauce and garlic. 
- Cut the tofu into rectangle pieces about ¼” thick- this makes for a fun presentation later! 
- Marinate for about an hour in the refrigerator.  Preheat your oven to 350.
- Heat your pan before adding the oil.  Pan sear the tofu strips on each side until browned. 
- Return tofu strips to the pomegranate soy mixture in the casserole dish and braise for about 30 minutes.
