Bourbon balls are a tradition in Kentucky, and every year I include them in my baking frenzy repertoire. I have officially pieced together the quintessential organic recipe; it's easy, fast, and fabulous!
ORGANIC INGREDIENTS (available in most markets or online)
1 cup semisweet chocolate chips
1/2 cup white sugar
3 tablespoons corn syrup
1/2 cup rum (Yes, rum! Organic bourbon is in the works and I haven't been able to find it yet. Oh, and by the way…a little goes a long way!)
2 1/2 cups crushed vanilla wafers
1 cup chopped pecans (Place nuts inside a folded kitchen towel and pound gently with the corn syrup bottle)
1/3 cup confectioners' sugar
1. Melt chocolate chips in a medium sauce pan over low heat, stirring constantly until melted and smooth. Remove from heat. Warm corn syrup and bourbon in a small sauce pan over medium heat until dissolved, then add the mixture to the melted chocolate. Add crushed vanilla wafers and chopped pecans. Mix until evenly distributed. Cover and refrigerate until firm.
2. Roll the chilled chocolate mixture into bite-sized balls. Roll balls in confectioners' sugar. Store in a covered glass container for a week before serving to blend the flavors. The treat definitely continues to get better over time, I store 'em in the refrigerator.
