Holiday Entertaining: How To Make Corn & Pepper Stuffed Tomatoes

Looking for a delicious, vegan appetizer that everyone can enjoy? Here's a
simple recipe for your holiday entertaining!



Serves 6


  • 1 3/4 cup fresh corn
  • 1 cup rice
  • 1/2 avocado, chopped
  • 1/4 cup chopped yellow pepper
  • 1/4 cup chopped green pepper
  • 4 tablespoon olive oil
  • 3 tablespoonchopped fresh cilantro
  • 2 1/2 tablespoon lemon juice
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground pepper
  • 6 medium vine tomatoes


In a large bowl, toss all ingredients together — except tomatoes — and set
aside. Slice tops off tomatoes and remove insides. Stuff each tomato with corn-pepper-rice mixture and serve.
