I love gourmet raw food, but when it really comes down to it, there's not much I prefer more than a big, green salad. Of course a salad is only as good as its dressing! This is my all time favorite creation. The hemp seeds and olive oil make this blend up so creamy, you'll be shocked that it's dairy-free! It's amazing on romaine, kale, cabbage, you name it! Creamy Peppercorn Ranch Dressing
Yield: 2-1/4 cups
- 1/3 cup water
- 1/3 cup lemon juice
- 2/3 cup hemp seed
- 5 cloves of garlic
- 2 teaspoons whole black peppercorns
- 1 teaspoon Himalayan salt
- 1 cup cold-pressed olive oil
Place the water, lemon juice, hemp seed, garlic, peppercorns and salt in a high-powered blender. Blend from low to high speed until smooth. With the blender running on low, pour in the olive oil to emulsify. Gradually turn up the power until just combined. The result should be very thick, creamy & delicious!
