This is a hearty veggie sandwich with a similar meaty consistency as a tuna or chicken sandwich but without the meat. An antioxidant- rich dish everyone can enjoy!

Serves 4
Ingredients:
- ½ cup red grapes, halved
- ½ cup lima beans, cooked and chilled
- 1 avocado, cubed
- ¼ cup walnuts, coarsely chopped
- 1/3 cup mayonnaise
- small bunch of chives chopped
- 8 slices whole grain bread
Method:
Combine first 4 ingredients into a medium bowl. In small bowl combine mayonnaise and chives, then add to first 4 ingredients. Spread the salad onto slice of bread and top with second slice of bread. Cut and serve!
